Still here

You've probably been wondering what the heck happened to me. After posting every day and sometimes more in November I've kind of just dropped off the radar here in December. I just wanted to check in and let you all know I'm still here. Nothing has happened. I'm just extremely busy here lately. I don't think I'll be posting much in December, but I plan on kicking it back up after the holidays. My husband is out of the office till Jan. 7th and I'm gearing up for a trip to Canada to visit with my sister and her family (and pick up some diapers!). Then there is all the madness of Christmas and everything that goes along with that. Lots of family time and less computer time.

But a quick update on a couple things...

E-Man is now sitting up on his own. *L* I think it's funny since I just mentioned that I don't think he'll ever learn since he never wants me to put him down. I was visiting my friend and she asked if he was sitting. I said not really and I put him down and well what do you know he did it. haha He must have been thinking "I'll show her!"

He also had his 6 month appointment and weighed in at 18 lbs 5 oz and 27 1/2" long. He got an unfortunate number of shots. I got a lot of good advice - preventions tips for eczema flare-ups, the neediness (we are trying to attach him to a little stuffy to help), and feeding stuff.

We got awesome pictures taken for Christmas/6 month with the kids. I'll have to share those at some point.

We did finally settle on somethings to do for advent. Some decorations and others activities. I'll have to share pictures and details in another post when I have time.

The first snow of the season (measurable) happened and we took the kids out in it. E-Man was fine till I sat him in the snow - K-Girl LOVES the snow and can't wait for more. Especially now because Daddy got her a sled. Oh and the Odyssey pretty much stinks for snow driving. Oh well. I still love it. ;)

Menu Plan Monday



1. Beef & Pasta *Crockpot* (8 Points)

Makes 8 (1 cup) servings

2 (14 oz.) cans tomatoes with juice, broken up
1 1/2 cups water
1 tsp. parsley flakes
1/4 tsp. garlic powder
1/4 tsp. onion powder
1 tsp. Salt
1/ tsp. Pepper
1 tsp. liquid gravy browner
1 1/2 lbs. lean ground beef
8 oz. Rotini pasta (scant 4 cups)

Combine first 8 ingredients in a large bowl. Stir well. Add ground beef. Mix. Turn into 3 1/2 qt. slow cooker. Cover. Cook on LOW for 6 to 8 hrs. or HIGH for 3 to 4 hrs. Add pasta. Stir. Cook on HIGH for 15 to 20 min. until tender.

Per serving: 322 cal , 13.6 g fat, 584 mg sod, 21 g prot, 28g carb Points: 8

2. Cheaters Chicken Cacciatore *Crockpot*(5.5 Points)


6 skinless, boneless chicken breast halves
1 (28 ounce) jar spaghetti sauce
2 green bell pepper, seeded and cubed
8 ounces fresh mushrooms, sliced
1 onion, finely diced
2 tablespoons minced garlic

Put the chicken in the slow cooker. Top with the spaghetti sauce, green bell peppers, mushrooms, onion and garlic. Cook on low for 7 to 9 hours. Serve!

Yield: 5 Servings

Calories 283, Protein 37g, Total Fat 5g, Sodium 742mg, Cholesterol 82mg, Carbohydrates 21g, Fiber 4g

3. Fish (Mrs. Paul's), Baked Mac & Cheese, and candied carrots

Baked Macaroni & Cheese
1/2 box macaroni
1 cup milk
2 Tbsp butter
1lb box of velveeta cheese (mix other cheeses if desired)

Bake at 350 for ~30 minutes

Cook Macaroni in large pan. While macaroni are cooking, in another pan, make white sauce with milk and butter. When hot melt some of the velveeta into the sauce and stir till smooth. Then drain macaroni and pour into 9x13 baking dish. Pour white sauce over macaroni and stir to combine well. Cut up small pieces of cheese and put them throughout the mac & cheese adding a few slices on top. Bake until brown and bubbly (about 30 minutes)

Candied Carrots

Drain carrots and put in sauce pan, cover with reduced calorie maple syrup and cook until heated. :)

4. Taco Night

5. Freschetta Brick Oven 5 Italian Cheese Pizza

6. Saucy Parmesan Chicken (4 Pts/Serving), Lipton Pasta Sides Butter & Herb (6 Pts/Serving), Corn (1 pt = 1/2 c.)

4 sml chicken breasts (1 lb)
1/4 c. Light Zesty Red Fat Dressing
1/4 c. Parmesan Cheese

Place all ingredients in bag - seal and evenly coat.

Place in refrigerator for 30 min to marinate.

Remove Chicken from bag and place on baking sheet

Preheat oven to 425 - Bake 20 minutes or until cooked

Points 4/serving
