Tofu Tuesday #12

I have some tofu sitting in my fridge waiting to be prepped and made for dinner, but I haven't gotten around to it before today. So hopefully one of these days I'll do that and I'll actually have a new tofu recipe for you. It just won't be today.

This week I'd like to ask you guys a question -

I don't regret my choice to go vegetarian, but I also can't pretend that there aren't meat meals that I do really miss. How do you all go about still enjoying some of those favorite foods while still leading the veggie lifestyle?

My mother-in-law has spoken of inviting us down for pot pie on a few occasions, (She still doesn't know I'm vegetarian. Yes, it's been 3 months now.) but things have happened that we haven't been able to. Pot pie is a hard one for me. I love it. I need to figure out how to make a vegetarian pot pie. (I'm talking about the slippery or wet pot pie, not the baked crusty kind either.) She also brought some chicken corn soup over and I did feel a tad jealous when my husband was having that. So yummy. I need to figure that one out too. I'm not sure what the best substitution for a soup would be.

The Husband also has spoken of hot wings on a few occasions. Now hot wings is one of those foods that I miss the flavor, but I have always been bothered by eating the meat off of the bone anyway so it's no biggie. I found a few recipes for hot & spicy tofu so I think we need to give that a try sometime soon. The great thing about The Husband is that he will try anything once. So we'll give it a try and if it works I can always have that if he wants hot wings and then no one will feel left out.

So how do you handle your old favorites with your meatless ways?

It is hard. I misssssss french onion soup and french dip sandwiches. Sigh...I love Panera. I try just to make things that still have the flavor...like soy chicken strips or soy nuggets. It was a challenge at first but not anymore really. Good luck Kel.

Kelli -- that's a tough one. I don't miss meat, but I do miss cheese. MorningStar products have always seemed to be a fair substitute, depending on what you're trying to fake. We use the chik'n strips in stir-fry or fajitas, and I think they'd work OK in a pot pie scenario. Somethings, unfortunately, you simply can't replace. My husband and I still reminisce about the homemade macaroni and cheese I used to make. There is no vegan substitute that even comes close. Over time our tastes have changed and it doesn't bother us any more.

I'm pretty good at veganizing recipes. If you want to send me one of your favorites that you want to adapt, I can try and help. And maybe get a yummy recipe for myself out of it!

I think that there might be a vegetarian boneless chicken wing product. You would probably have to look at Wegman's or something similar to find it if there is one. For soup recipes, I usually switch out vegetable broth for the chicken broth, although that won't work for everything, or I put the veggie crumbles in place of ground beef in some things like chili if DH is going to eat it(for me, I just prefer to leave it out altogether). The switch was a lot easier for me than you I think, because I don't like chicken wings, pot pie or dumplings of ANY kind, roast beef, shellfish, and hundreds of other things that most people miss when they become vegetarian. You can do it though! Investigate the cold organic section at Giant, and the boca/morningstar farms section in the freezer case again. Now that you've been eating veg for a few months, things will look different, and you might get some good ideas!
