Seriously guys, tonight I found the key to 5 minute taco night. So easy! The Husband walked in the door and I rushed to get dinner on the table and we both were amazed at how little time it took. I have not made vegetarian tacos yet. It's honestly not one of my favorite meat meals either though. The Husband loves them. K-Girl only likes it if I kept the seasoning out of a little of her burger, because they are always "too spicy". E-Man doesn't like hamburger anyway so he would never eat on taco nights. So what's the use, ya know?
Last trip to the store I saw that LightLife had a Smart Ground that is already seasoned for tacos and burritos. I thought ooooh perfect and figured I'd give it a try as I've already tried their regular Smart Ground and we were all pleased with it. The awesome thing is heat and eat. There isn't the draining as with beef and you don't have to be concerned with heating it thoroughly as not to sicken your family. 4 - 6 minutes in a frying pan and this stuff is nice and hot and ready to serve.
While the Smart Ground was cooking, I zapped a 60 second mexican ready rice, warmed the taco shells, and got out the cheese. As soon as the Smart Ground was heated we were ready to eat - in about 5 minutes.
And you know what else? K-Girl ate two soft tacos - the right way! Filling on the shell, rolled up, and ate it! And not once did I hear "this is too spicy". E-Man? Well he ate 1 1/2 tacos - the right way as well. And they both said how good they were. We have a winner for sure! I am just amazed at how well E-Man does with all the meat alternatives. The child does not like actual meat. He doesn't like hamburger and he doesn't like chicken unless it's processed down into nugget form. He usually does so well with most of the meat alternatives. My little vegetarian in the making. haha ;)
So if you need a fast meal you should give this stuff a try. It's even faster than a freezer pizza. I definitely think we'll be eating more tacos...which should make for a happy hubby. Although I think next time I may be picking up 2 packs of the Smart Ground.

so I did a Tofu Tuesday! we had enchiladas tonight. with black beans, rice, mushroom, green pepper, onion and cheddar.
the girls loved them. we're aiming for three meatless meals a week, but you know me, i never write down how i make it!
Sounds good! Sorry I missed Tofu Tuesday this week. I was completely uninspired. Maybe it's the cold that's raging inside my head and made me temporarily unable to smell and taste food! See you next week!

How does the taste compare to real meat? I'm not into doing the 'fake' route, but have you thought of making refried bean tacos? I've been meaning to make them for a while, and just haven't gotten around to it! I enjoy your tofu tuesday posts :) Makes me think outside the box a bit.
