Fruit Pizza

1 (18 oz) roll of refrigerated sugar cookie dough
8 oz cream cheese
1/4 c. powdered sugar
1 tsp vanilla
4 - 5 kiwi fruits
12ish strawberries

Sprinkle a little flour onto a cookie sheet. With floured fingers, pat cookie dough into a pizza link cirle about 1/4" thick. Bake according to package instructions. Let cool. Mix cream cheese, sugar, & vanilla together and spread on cooled cookie crust. Slice kiwi fruit and strawberries. Place Fruit in a circle on crust. Serve immediately or refrigerate.

I made this recipe the other day for my playgroup's potluck style picnic. It was delicious. You can feel free to play with the fruits on the pizza as well. I had kiwi, strawberries, and blue berries on the one I made. We had a little bit of leftovers that the kids asked to have for snack when we got home and then after dinner for dessert. Since it doesn't hold really well I happily gave it to them both times. Kids requesting fruit over an ice cream treat speaks volumes for this yummy and mostly nutritious snack.

But I must mention, my daughter ate all the strawberries on the "pizza" but when I gave her plain strawberries the next day she claimed that she "does not like strawberries". Interesting. Silly child. But if it takes making them into a pizza or a salad to make them more appealing, this momma is all for it.
