I'm taking the easy way out this week. Yes I know I've been quite the slacker in this whole blogging thing lately, but it's the end of summer and things have picked up in the crazy department. K-Girl had her kindergarten orientation this morning and tomorrow the bus will pick her up for her first official day. She's going whole days so I won't see her from 8:40 until 4:00. I'm a weeeee bit nervous, but she's excited. Soooo anyway that's my excuse now on to the recipe.

Any of you that might have been around here for a while might remember me sharing this recipe before. I got the recipe at my bridal shower and it's been a family favorite. When I became vegetarian I just made a quick substitute and all was well.

Spaghetti Pizza Pie

Ingredients:

8 oz Spaghetti, cooked & drained (I like whole wheat)
½ cup grated parmesan cheese
1 egg, beaten lightly
1 lb ground beef, cooked & drained - SUBSTITUTE in one pack of LightLife Smart Ground for the hamburger and you have yourself a vegetarian meal and I SWEAR no one will be any the wiser. I do prefer the Smart Ground over the MorningStar Meal Starters Crumbles. I just don't care for their texture in this recipe. The Smart Ground is perfect. And you know what else I love about the vegetarian alternatives? - They don't require the prep work! I HATED browning hamburger.
2 cups spaghetti sauce - Bertolli's Organic Tradition Tomato & Basil is yummy!
1 package (8oz) shredded mozzarella cheese

Instructions:

Toss cooked spaghetti, parmesan cheese, and egg.
Place in 9” pie plate or deep dish baker.
Press along bottom and sides to form crust.
Mix cooked "meat" and spaghetti sauce.
Spread meat mixture over spaghetti crust.
Sprinkle with the mozzarella cheese.
Bake @ 350 for 20ish minutes or until heated.
Let stand 5 minutes before cutting


I'll see if I can't update this sometime with a picture later this week. It's really yummy and really easy and even the kids will like it.

Thanks for the good recipe. My hubby is a die hard meat fan and occasionally I substitute with ground round and he's never clued in!!
