I'm always looking for quick and easy lunches. Since I don't do the whole salad thing and I hate to live on PB&J or Mac N Cheese, finding a new quick and easy lunch is exciting. Now I don't know about you, but when I picked this little cup of soup off the grocery store shelf I wasn't thinking "Wow this is going to be amazing!" because I mean come on it's a cup of soup. But to switch it out with a pack of ghetto noodles (ramen noodles) I'd say it's a pretty fair exchange.

All the goodies kind of went to the bottom so perhaps I should have used the spoon like on the packaging. ;) Ah well. It really wasn't too bad. I'd eat it again for something quick and no fuss. My only complaint is that my beans and pasta were still rather hard so I'll have to up the prep time next time. i have a quick, easy and vegetarian lunch recipe that is absolutely delicious. All you need is one 15-oz can of chick peas, drained and rinsed, 1 tsp. fresh lemon, 1 1/2 tsp. olive oil, and 1/4 c. loosely packed parmesan cheese. Simply mix all of them together, season with salt and pepper and viola! chickpea salad with lemon and parmesan! Delicious. If you can help it, chill it for about a half and hour. The favors are so simple and just lovely together. I found this recipe at orangette.blogspot.com and it is absolutely my go to when I have nothing else around.
