I had a slight obsession with these little things. Incase you haven't had the pleasure to meet one yet, this is a "Wake Up Wrap" from Dunkin Donuts. And as the little image says they are $0.99 each. Yum. They make you feel better about yourself than when you're scarfing down 2 boston cream donuts. ;) So after a bunch of trips to DD for them I decided that I needed to start making them myself. It's not like they are that hard to make. All they are is a tortilla with egg and cheese. They are now something I enjoy at home for breakfast, lunch, or a quick snack. Of course the DD ones still taste slightly better (why is that with everything you get out rather than make at home?), but they are close enough for me.
I typically make two at a time (unless I'm making a quick snack) and this is how I do it...
Scramble two eggs in a bowl and add a little milk to make them fluffy and just a little salt and pepper.
Spray a pan with cooking spray (or use butter) and fry up your eggs. Don't scramble the eggs in the pan. Instead cook them like you would an omelet.
Once your egg is cooked then I cut it down the middle to make two halves and sprinkle with some shredded cheddar cheese (although you could just lay a slice of american on it as well).
I let that melt a little bit and then slide each half out onto a tortilla. I fold the tortilla over on the egg and put them back in the pan just to fully melt the cheese and warm the tortilla.
After that they are all finished and you can take them out of the pan and enjoy!
They are so quick and easy. And most of all they are yummy too!
Enjoy!
