The holidays are over and my meal plan is back. We're cooking again and exploring our poor neglected cookbooks. We've found a bunch of meals that we're looking forward to trying. I'm excited that the first one was a success. I'd say smashing success, but the kids both turned their noses at it. Eh. I'm over the whole pleasing the kids with meals thing. Some day they will try more and some day they will actually take a bite of something before making up their minds about whether or not they like it. So frustrating. But anyway...
Tonight's dinner was out of our Betty Crocker's Healthy New Choices cookbook.
Vegetarian Sheperd's Pie

Prep: 10 min; Cook: 23 min
6 servings
2 cans (15 or 16 oz each) kidney beans, rinsed and drained
1 jar (16 oz) thick-and-chunky salsa (2 c.)
1 cup frozen whole kernel corn
1 medium carrot, chopped (1/2 c.)
1 1/2 cups warm mashed potatoes
(if you don't want to make them from scratch, instant mashed potatoes will work just fine or leftovers if you have them)
2 Tablespoons grated Parmesan cheese
Chopped fresh chives or parsley, if desired

Prep: 10 min; Cook: 23 min

Heat beans, salsa, corn, and carrot to boiling in 10-inch nonstick skillet; reduce heat to low. Cover and simmer about 15 minutes or until carrot is tender.
Spoon mashed potatoes onto bean mixture around edge of skillet. Cover and simmer 5 minutes. Sprinkle with cheese and chives.
So like I said, the recipe was great! It's not that pretty, but it was really really good and very filling. And we even have two smaller (great for lunch) portions left over. I'll definitely be making this one again. Maybe the kids would try it next time... yeah not holding my breath for that one. ;)

That looks good!!! I'm not a vegetarian.. though I have tried. Just can't seem to stick to it.
