Once again, I'm not a food photographer. There's a very pretty picture in the book of this meal, but I don't know about you but somehow mine never look quite like that. This is what I got...

Servings: 6
Ingredients
1 can (15 or 16 oz) garbanzo beans, rinsed and drained
2 large tomatoes, chopped (2 cups)
1 small red bell pepper
4 medium green onions, chopped (1/4 cup)
1 clove garlic, finely chopped
1 Tablespoon chopped fresh or 1 teaspoon dried oregano leaves
1 teaspoon paprika
1 teaspoon olive or vegetable oil
5 cups hot cooked couscous (use plain for this recipe)
1/4 cup grated Parmesan cheese
Heat all ingredients except couscous and cheese to boiling in 2-quart saucepan. Serve over couscous. Sprinkle with cheese.
This is a super easy meal. It didn't fly with the kids. The Husband ate it, but I think he'd be alright if I never made the meal again. I, on the other hand, thought it was delicious and had seconds. AND I'm looking forward to making up a little more couscous so that I can enjoy the leftovers again. Very yummy! And this coming from someone who has never tried something so funny as "couscous" and before a week or two ago never tried garbanzo beans either.
I do think my parents are probably quite taken by my recent Tofu Tuesdays posts. Their picky picky little girl's tastes are finally growing up a bit. ;)

So funny you did a post on chick peas or whatever...we have 5 cans and yesterday Jon told me to do somethink with them and I said...put them in a salad? He rolled his eyes. LOL
This sounds delicious. We are huge couscous fans here.
